PB & Banana Muffins

These muffins were inspired by a recipe that a friend sent to me. I made a few modifications to it, and voilà! A new recipe was born. They are flourless, low in sugar and can be made in a matter of minutes.

The recipe can be easily altered to your taste. Try subbing the chocolate chips and coconut for applesauce and some cinnamon, or a few tablespoons of maple syrup. Or swap 1/2 cup of milk for 1/2 cup of greek yogurt. Add some unflavored (or flavored) protein powder to give them an extra boost.

The beauty of baking is in the creativity, so have some fun with it!
